As his sisters pale brown rice, black rice is rich in vitamin E, iron, fiber and antioxidants, but a new study suggests that it may also reduce inflammation associated with allergies, asthma and other diseases.
A variety neglected rice, sometimes called "forbidden rice" because only the emperors were allowed to eat, black rice is still relatively rare in the West. Black and brown rice retains many of the nutrients lost white rice during processing, but black or purple rice is supposed to be superior to the Brown varieties for several reasons.
For its part, black rice competes with other foods deeply hued in contained pigmentation, a powerful antioxidant that can help protect against cancer and heart disease. Anthocyanins are found in purple, red and blue, food such as berries, grapes and aubergines. Zhimin Xu, an associate professor in the Department of food science - Louisiana State University, a dollop of black rice bran-, or 10 spoonfuls of cooked black rice contains the same amount of pigmentation as a dollop of blueberries. In fact, Xu believes black rice is more nutritious than blueberries low sugar content.
It may also have anti-inflammatory properties. Previous studies in cell cultures suggest that black rice suppresses the release of histamine, the neurotransmitter that causes inflammation in response to allergic reactions. This study, published in the American Chemical Society Journal of Agricultural and food chemistry, examined the effects of black rice extract on inflammation of the skin in laboratory mice. The research was conducted at universities in Korea. The researchers found that feeding mice standard diet supplemented with sound of black rice of 10 per cent significantly removed chemically induced inflammation of the skin of ear compared mice fed with a diet without the sound of black rice or brown rice of 10 per cent bran supplemented with plan. Prolonged inflammation is associated with a host of medical conditions, including allergies, heart disease, cancer and infectious diseases. Researchers are optimistic that in the future, food containing black rice bran can be used to treat or prevent conditions associated with inflammation. Black rice is an addition to any diet healthy, although further research is necessary before starting to add to our Cheerios.
In the meantime, look for black or forbidden rice to Asian markets, or buy it online. Keep in mind that the health benefits are found in the outer layer (sawdust), it is important to buy whole grain varieties.
